Funny, I have a jar of coconut oil sitting on my kitchen counter! I have read about all kinds of health benefits from it, but got lazy about using it (I was spreading it on toasted English muffins instead of butter). Need to start using it again, as I am at the age where I'm starting to wonder where the line is between ADD and early dementia.

I often sat with a lady who had Alzheimers while her hubby golfed or ran errands. He had been told about the coconut oil by a hospice worker who came to the house every week. The last couple of months, he (and I) were using it in various recipes for his wife and it did seem to help a bit.

Eating coconut meat does wonders for the brain/mind. Coconut oil is also indispensable. The health benefits are pretty amazing, really!

~ The type that says "Virgin" has the prominent taste of the Coconut.

I've found it more pleasing to eat straight-up taste wise.
