What will it do if I do this to my Android phone? I am having issues and the T-mobile guy told me how to do this and it will shut my phone down. When I did get into that function to wipe it, it said it could not be undone. I am scare to wipe my cache partition.

Cache is temporary files. This can be wiped anytime with no harm done.

Wiping the cache partition is different from clearing individual app caches.

Deleting cache is one of the basic steps in fixing Android issues. You don't have to worry as long as you don't delete the app data. It will make your phone faster and will get rid of any glitches that you might be experiencing.
