What happens? How long does it still work properly?

They explode when that happens.

In all seriousness, they usually continue to work, but certain applications may no longer work properly that require newer versions of the iOS. Developers tend to update their applications constantly that require a certain version of the operating system. Another issue is lack of continued product support.

There is no way to accurately tell how long those devices will continue to work. A modern example is if you have a 3G iPhone by next year it will no longer work on the cellular network for voice or data It may work on wifi data for a slightly longer period.

The Wikipedia article "iOS version history" includes all of the versions.

If you click on "show" (way over on the right) for any version in that article, all the details will drop down....including which phones will work re that version.

I have an original iPhone SE from 2016 or 2017, a 2020 iPhone SE from 2020, and an iPad Pro from 2019, and I'm running 14.7.1 on all of them (iOS on the phones, and iPadOS on the iPad).....and 14.7.1 was the current version on all until 14.8 was released two days ago.
