I hear you can only find these in certain specialty shops. Does anybody know if they can be found locally?

Trader Joe's has them. I can't remember what they call them; they're in the cookie section. I sent some of those out for Christmas gifts!

If you google stroopwafel pizzelle you can find directions & recipes to make your own with a pizzelle iron.

Stroopwafels are sold at the World Market in the Sycamore Commons shopping center in Matthews. They have the original ones straight from The Netherlands. I am Dutch and I buy them there all the time. How we eat them, for the quick way, heat one or two in between some paper towel for 10 secs, but the more traditional way, when drinking tea or coffee, lay the cookie on top of the mug, and the heat from your beverage will get them warm and delicious!

BrainH1970, it actually is a real waffle, sorry not a pancake. lol

The ones from Trader Joe's I was thinking of are called Caramel Bites. They might not be what the OP wants, the package says "mini stroopwafels". They sure are good - not overly sweet. Not Heart Attack Grill fare!
