Several scenic areas are east/northeast of Charlotte (once you get away from the I-85 corridor), near Albemarle/Mt. Pleasant/Badin Lake/Lake Tillery. These have decent scenery and agricultural areas that make for a pleasant country drive.
Try taking 74 out to Shelby. Then go north to NC 10. Go east on NC 10. NC 10 will cross 321. You could take 321 back to Gastonia, cross under 321 & take a left on Robinson Rd, which will eventually take you into SE Hickory or check a map & see if there's another route that would appeal to you.
NC-10 is a pretty nice drive from Shelby to the town of Catawba. From Catawba, drive a couple more miles on US 70 east to the bridge crossing Catawba river.
For those of you who cannot find NC-10 in Shelby, it is the same as 226/Polkville Rd.
I should probably say that to me rolling hills in Pennsylvania means Chester, Lancaster, York, & Adams counties. That's primarily SE Pennsylvania. You might want to take 74 out to Rutherford County. Then work your way up to Morganton & come back to Hickory.
That's a good route to take. Up in the Cherryville area, they have some pretty farming areas as well. We visit my wife's family in Cape Cod, MA often and take the I77/I-81/I-78/I-287/I-95 route. The farms and countryside in that area of VA and PA are just beautiful. It's such an enjoyable drive going that way.

The easiest way to get to Cherryville is to take 85 South to exit 10. Take 74 west to the Cherryville exit in Kings Mountain. Bear right at the top of the exit ramp & follow the signs.
If you are north of Charlotte, try taking Highway 115 from I-40 up towards Wilkesboro. Then, explore the areas around the many wineries in the Yadkin River Valley/Swan Creek Valley area.
