If a married couple converts to Catholicism, and one spouse dies, is the other allowed to remarry? (to another Catholic) If so,what happens to the memory of the first spouse, would the first marriage have to be invalidated through a church annulment before a second marriage could take place?

Thank you!
I have a close relative that is Catholic remarry after losing his wife. There was no issue with him having to get the marriage annulled, or anything like that.
Go to God in prayer with the matter. I.e. go to the top. That's better than relying on the church for rules and direction. God will be consistent; man and the church will be as shifty as the winds.

Depends. If you murder your spouse, they would frown on the second marriage.

If a spouse dies, the marriage no longer exists since the vows state "until death do us part". This is as far as I know the same in all religions or civil marriages. No annulment or anything of the sort would be needed. The surviving spouse is free to remarry. The fact that the married couple converted to Catholicism is not relevant.
