French, Italian, Chinese, Thai, Japanese. Mexican food, outside of areas with large Mexican population is not that popular... Geez.
Seriously, what's your hangup about Mexican food? Never seen anyone, whether they like it or not, act like it has little to no role in the US food scene. I remember driving from Columbus to southern Kentucky on a camping trip and stopping in this tiny town that had one small shopping plaza. The only restaurants were a Subway and a Mexican restaurant. They're everywhere.
