I'm assuming the OP was conceding that TN was best in BBQ and posted the poll to determine the 2nd best state.

So, in that vein, I vote North Carolina as 2nd best and Texas as 3rd. I'm not a huge fan of brisket.

Vinegar based pulled pork all day in NC. Hush puppies, stewed potatoes, corn sticks, Brunswick stew. Can't beat it

I think this poll has it right. TX has much greater variety than NC. You can find great pork BBQ in Texas as well as brisket, and sometimes great BBQ mutton. NC is almost exclusively pork, and brisket when you find it ain't great. TX BBQ also has more sausage varieties. While great BBQ needs no sauce and mostly sauce exists to hide the flaws of the pit master, TX BBQ also has greater variety of sauces, plus greater variety of wood smoke : Pecan, Oak, Mesquite. Good NC BBQ is mostly hickory smoked, which is more bitter in flavor, hence the need for sweet or acidic sauces in NC BBQ. Memphis and KC style BBQ are also great!

I prefer Texas BBQ. Only need sauce in a side bowl for an occasional dab. Otherwise, no sauce needed at the good BBQ joints.

They're all incredible, but I can't go against North Carolina. Also, I hate seeing these Dickey's BBQ Pit restaurants popping up around North Carolina, isn't that place Texas-style? NO BUSINESS IN NORTH CAROLINA. Now, Smithfield's Chicken 'N Bar-B-Q, that's a different story! Along with Bojangles and Cook Out, Smithfield's is the best and "most North Carolinian" fast food chain in the state. If you ever visit North Carolina, give these three a try.

Texas barbecue is severely overhyped. North Carolina has good barbecue but bad sauces.
