Asheville. Surrounded by the Mountains, Great Dining Scene.... Atlanta isnt far away for a weekend trip... NC > KY ..... and I wouldnt have to be surrounded by UK fans

Corning NY or Augusta Maine
Corning...Nice and highly regarded Downtown, a couple of legitimate museums, has a Fortune 500 company(Corning Inc.) and close to the Finger Lakes/some interesting places(Ithaca, a couple of canyons, Rochester, etc.).

Spokane, WA vs Peoria, IL
Spokane.. at least its topographically interesting.
Probably Eugene. For 4 months the Cascades get snow so it's unwise to cross them, which means really the only direction you can go from Bellingham in the winter is south. Eugene would have places for weekend trips in all directions
Salida, CO because it is close to Colorado Springs and Denver. New Mexico feels more isolated.
