I-495 Beltway around Washington D.C.
vs
I-285 Bypass around Atlanta GA
I-495 is a horrible, horrible road, especially in Maryland. And even more especially the "top side" between the American Legion Bridge (Potomac River) and I-95 near Beltsville. It's way too crowded, the exits are set too close together so there's lots of on-off weaving, and it's surprisingly curvy for an interstate highway.
Thus, even though I've never been on I-285, I'll pick it anyway.
I-8 in its entirety (San Diego, CA to Casa Grande, AZ)
vs.
I-10 from Los Angeles to Phoenix.

I think you're underestimating I-285, pre-covid it was one of the most congested arteries in the southern region.
I'ma go with I-8 - I've used both and I-8 is definitely more scenic overall.
I-15 Through Las Vegas NV
vs
I-10 Through Phoenix AZ
I-10. One of my favorites. I-55 through Jackson MS or I-20 through Shreveport?
I-55 through Jackson MS - I use both fairly frequently between my super-commutes from AUS to ATL and back. I often bypass Shreveport via I-220 because how poorly maintained I-20 is through Shreveport, if you bring coffee it will be all over your windshield by the time you leave Shreveport... not to mention I'm not a fan of how they pretty much pin you to the walls over the bridges through Downtown Shreveport.
I-35 between DFW and Laredo
vs
I-75 between Atlanta and Tampa

I-35 due to fewer trees, more urban/suburban areas (including central TX), and even a few more hills. I'd rather take a $60 shuttle flight from ATL to TPA instead of driving through a stretch of mostly flat pinelands and cotton/peanut farms with numerous billboards for fireworks, chain motels/restaurants, and adult stores along the way.
The Long Island Expressway in NY vs. The 405 in Southern CA

The LIE aka I-495. They both suck for traffic but give me NYC and the Hamptons any day.
Big City didn't put up another pair, so I'll jump in.
The South Coast Contest:
I-95 in South Florida (Miami to West Palm Beach)
vs.
I-5 in Southern California (San Diego to Los Angeles)
Good looking out. I like the natural scenery of SoCal better than the scenery of SoFla. That said I'm East coast through and through and it's only a 3 hr plane ride vs 6 hrs to the left coast so give me I-95.
