Las Vegas, More Eye Popping experiences can be had in Vegas. While you can't do either City in A Single Weekend, You Can do Most of Nashville by the 3rd or 4th weekend, Vegas on the Other Hand would take Half the Year of Weekends to Complete,
The Strip vs Lower Broadway is no comparison either, Not a knock on Lower Broad as Not Many Streets in America outside of NY or Chi could favorbly compare to The Strip in Terms of Activities and things to do,
You Could Walk and Circle All of Lower Broad in about 30 minutes assuming you don't get distracted and make pit stops or do sing alongs at the various honky tonks, like Jason Aldean's Bar or Kid Rock's Steakhouse
The Strip!? It would take about 2 to the 3 hours to walk and circle that thing Provided IF you don't get distracted and wanna make pit stops and check out this or that, along the way, and You Will, You're Not gonna just Walk Past Bellagio Fountain and Not Wanna Stop, Not Gonna just Walk Past The Erupting Volcano or MGM Grand, in that Case 2 to 3 hours would morph into 4 or 5 hours to just walk around the Strip with out actually stopping inside any places, We"re talking about just Walking Around just to get a scale of the of the Two Places or Streets
It Would Take WEEKS to do Everything in Vegas That You HEARD OF, Not even taking into account about the Things you didn't know about until you get there

Vegas is a must-visit if you haven't been there; Nashville is no comparison at all. If you've already been-there-done-that with Vegas then I think that's when Nashville might make sense as an alternative. Vegas is probably a top 10 tourist destination city in the world. Nashville isn't top 10 in the USA.

I think you're forgetting some things you can do in the Nashville area, per this post. Honestly, I think you're underrating the Nashville area a little bit. I.e. that the antique store(on History Channel's show American Pickers, I forget the actual name of that store, sigh) from LeClaire, IA has a 2nd store in Nashville, Loveless Cafe(which is an old school southern restaurant), all the meat and three restaurants there, Nashville Hot chicken places(and yes, such chicken sandwiches started there before it became a bigger national eating trend), the Natchez Trace Parkway starts in the Nashville area(and starts not too far from Loveless Cafe), the list goes on and on. Don't forget the Parthenon replica in Nashville, is also cool IMO. I don't intend this comment to be conclusive of mentioning everything one can possibly do in Nashville, but I think you might be underrating the Nashville area a little bit.
To me, I think Nashville is a city where it takes more time, to take in everything you can do there. And despite that strip of country music bars near downtown Nashville, it's less reliant on entertainment to lure in tourists. Where in Vegas, it's more entertainment oriented, and for sure you can see they more rely on entertainment things to attract tourists there. I always have gotten that sense that I get my fill of Vegas quicker(and where after just a few days, it's enough for a while for me), where in Nashville it feels more well rounded where you won't get bored after a few days. I guess one may be less bored in Vegas after a few days, if you're really into resorts and gambling? I'm sorry, but that stuff can get old(at least to me) after a little while.
Btw please don't read my post as saying I dislike Vegas, since that is NOT true. I'm just comparing these 2 cities, that's it. And I honestly like some museums and things to do that are out in Vegas, i.e. The Mob Museum, Atomic Testing Museum, Pinball Hall of Fame, to name a few examples. And Atomic Liquors, is actually a pretty cool dive bar. As far as craft breweries go, I think Nashville has more such breweries that are locally based there. I.e. Southern Grist, and more I'd remember if I were to do a search on Google or Untappd.
Nashville is more interesting to me as a city, as a weekend trip goes. That being said, for a week, probably Las Vegas, but that in part is because only 2.5-3 days of that time would actually be spent in Las Vegas, and the other 4.5 or so days would be out amongst the surrounding national parks, which are a far more distinctive/unique vacation offering, for me, than anything individually surrounding Nashville.
Nashville isn’t nearly as touristy. I could do anything that interested me there in a weekend, easily.
Vegas is tacky but primarily exists as a tourist trap. Neither are remotely my cup of tea, but if you’re into touristy things Vegas can’t be done in a mere weekend.
Surprised they are starting to branch out after this long, with chain locations. Vegas would probably be a good choice.
Hopefully they will be successful. The original location is fantastic and charming and original, due to its long standing history there in Brooklyn.
Personally, the experience is interesting and original, but the several times I've eaten there, I'm never blown away. The steak and burgers were too greasy for me, and the quality was ok to good, but not incredible.
Overall, an above average steakhouse, but not an excellent one, in my opinion.
