I'd say Vegas if you love to gamble, love a bit of flashy entertainment and shows, splurging on food and drink, and keeping it to a tight 2 days, 3 max.
Nashville is more of a well-rounded experience, in terms of cities. I'd stay a while in Nashville and see as much as you can.
Nashville folks are friendlier, and the food there is much better, in my experience.
Vegas is a fantastic city that is growing and has so much to do, but it's less friendly and much more flashy. Vegas gets ugly fast in some areas, if you land on the wrong side street, away from the strip.
I would much rather see Vegas and stuff around it like the Hoover Dam and Red Rock Canyon National Park, I think, more than Nashville and its surroundings.
I've lived in Vegas and visit Nashville often. I would go with Vegas. There are more amenities like shows, shopping, water shows, aquarium, coasters on top of buildings and gambling. The only way I would choose Nashville is if I was looking for country music or sports related stuff. Nashville is still missing a lot of things. I don't even think they have an aquarium yet.

Definitely would rather spend a weekend in Vegas than Nashville. Not a fan of the honky tonk country music scene in Nashville. I know there’s more than that but that is a huge part of its character.
