Scandinavian Studies can be a good side dish, but it is not a good main meal. You are restricting your job possibilites to mainly the academic area if you've only got that.
And I'm told the academic area is bone-hard at the moment.
Paired with something, it becomes more atttractive. Chemical Engineering for the Norwegian oil sector. Environmental Engineering. Finance, accounting, maritime law, etc. Each one would give you a good shot at companies operating in or selling to scandinavia. Or Scandinavian companies targeting the US.
Where my kids go to camp, Concordia Language Villages, is populated by people who have extensive knowledge of another language, and some are making a living at it, as they have been there for years. Whether full or part time, is something I do not know.
You could teach Danish somewhere if you are so inclined in the US with a degree, otherwise a Scandinavian studies degree is largely unmarketable from most any private-sector employer's point of view. Academe is about the only place for it or something to do with linguistics.
I would go with a business degree instead based on your posts.

I am seriously considering taking a degree in Scandinavian studies, since I already speak Danish fluently and am learning a trio of other languages in the same group. But what can an undergraduate in Scandinavian Studies be used for other than diplomatic missions?
Not much. I would suggest getting a double major in something else so you have something to fall back on. While I don't know anyone with a Scandinavian Studies degree I have known plenty of people with history degrees or a degree in a foreign language who have not been able to get jobs. One of them has a Masters in history and is delivering pizzas. Study what you like, but make sure you get a degree that is more marketable. Maybe with the Scandinavian studies you could get a double major in international business.
