I've got to admit, I wouldn't recommend it.

STEM isn't all it's cracked up to be, and you don't exactly make a ton of money in it.. especially with just a bachelors degree. When you're talking physics, chemistry.. etc. etc.. you're not going to get a bachelors and become a CERN researcher. To do anything real, you need a PhD. There's a lot of propaganda to get people in the STEM fields, but there isn't a ton of money to be made. On top of that, you're looking at a 100% lifestyle change to living, eating and breathing school. Is it really worth it? Do you really want to put your life on hold for this and pay for your education again?

I studied a STEM degree, I can't say it's completely worth it. My wife and I are bored, saving up and selling everything to travel the world.

Personally, if I were you I'd try to get on the business side of a tech or science based company.

If you are choosing a college in your area, perhaps you could bring your transcripts to meetings with advisors and figure out how much credit they would give you for the courses you have taken already. Also find out if any courses are offered in the evening so you can keep your job while you take additional classes. Their answers might vary quite a bit.
