There are a lot of variables. Hiring managers know that a 2.5 is not equal across all engineering schools. I think a 2.5 from MIT may come across better than a 3.0 from a less prestigious engineering school.
I've heard that generally employers dont really look at your gpa. Does this hold true in the Engineering field?
I mean as long as your have your degree, does it matter if you have a like a 2.5 gpa?

What is the GPA in and out of major?
What is the GPA trend from 1st to final year.
What is the GPA in subjects directly related to the job description.
A 2.5 translates to roughly a 75% passing rate. How many companies want to hire an Engineer who gets it right 75% of the time if the answer to the above questions are all a 2.5?

DH has done some hiring in engineering. He says you usually don't ask the GPA, but you grill them on their knowledge, look at what courses they have taken. So I guess the real answer to the question is: "It depends".
For most of my friends in engineering the biggest question was what type of internships or co-ops they had done. It trumped almost all.
At my college GPAs above 3.5 were exceedingly hard to come by in the engineering fields. So if they were familiar with the university something in the 3s was perfectly fine and would not trigger a panic for those hiring.
The top companies will look at your GPA as they want the best and brightest to work at their companies.
The big ones in Computer engineering want 3.5 or higher.
Bottom line for any company is can you get the job done efficiently and correctly. Coming out of college I only had 2.7 with internship working on high-profile projects. Parsons, one of the top design/consulting engineering company in LA extended me an offer.
If you can justify your 2.5 with a couple of years worth of internship, then gpa becomes secondary (note that I didn't say gpa doesn't matter).
I think it also depends on what kind of engineering.
