So I am going to be travelling along i25 and I would like to propose to me girlfriend. Are there any places that you would recommend? Of course I am willing to ,drive off the interstate a bit, but in that general area would be good. Thanks for the help.

The side of an interstate highway is not usually a romantic spot.... but there is a pull off or scenic on I-25 southbound just before exit 151. It's an overlook for the USAF Academy and Pikes Peak. There are much better places though, like Garden of the Gods, just west of I-25 off an exit by the same name.

FWIW I-25 in Colorado really isn't all that scenic. With the exception of Monument Hill and Raton Pass the highway runs well east of the mountains whereas I-70 cuts right through them. That's just my 2 cents though.

If you and your girlfriend like going to music concerts Red Rock Amphitheater is very nice.

All of these are 10 minutes or more off I-25. But you plan to be married a long time, no?

Turnout on the northwest side of the Juniper Way Loop, Garden of the Gods, Colorado Springs.
Gazebo at Bancroft Park, W. Colorado Ave. at S. 24th Street, Old Colorado City. If she says no, pick up a pastry at La Baguette across the street so it will not be a total loss.
West veranda overlooking the lake on the west side of the Broadmoor, Colorado Springs. Just walk in like you belong.
The gazebo on the lake in Green Mountain Falls, about 15 miles west of I-25 at Cimarron (US 24).
Many Parks Curve overlook, Rocky Mountain National Park. Road may or may not be open. Figure an hour off I-25.
Will Rogers Memorial overlook, above the zoo, Colorado Springs, Co.
Got time? Need to feel the burn? Hike to the top of the mesa at Sugarite Canyon State Park, Raton, NM. Or hike the Incline, Manitou Springs, Co.
Weather permitting, drive to the top of Pikes Peak. Pick the view you like on the way up, pull over on the way back. She'll be breathless. So will you.

Where, roughly, along I-25 are you going to be? It traverses the whole state, north to south.

Lake Gulch road outside of Castlerock next to hwy 83 next to an old barn. Perry Park Golf Course is another option.

Won't be able to do that anytime soon. A rockslide blocked the freeway and damaged the road. I 70 is closed through the canyon until further notice.
