It depens

Amtrak at Hartford Station to Penn Station in NYC is 2 hour 45 mins Northeast Regional

Springfield to New Haven Shuttle 45 mins ride then transfer at New Haven Union for Northeast Regional to Penn Station 1 hour 37 mins

or You can take Amtrak Shuttle Springfield, MA to New Haven shuttle then transfer to Metro North 70 min ride

New Haven Union Station has a pizza place, Dunkin donuts, cafe if the train is late or something grab a bite

Can you drive? Just pick it up somewhere on the New Haven line. If you don't want to drive a lot, you could just grab the train in New Haven, West Haven, or Milford (free parking in Milford on weekends). If you drive to SoNo or Stamford your ride will be an hour or under.
