Easier and sounds like it's more palatable to use lightly cooked julienned cabbage.
A splash of vinegar in the water removes any cabbage flavor if you perceive any.
Lightly cooked cauliflower works well too.

Ha ha, really the only objectionable thing was the texture.

Do you live close to WPF, or do you order the bread? Just checked and it would be $30 for 3 loaves with shipping.

I already eat a ton of cruciferous. Need something different once in a while, and these "noodles" really are almost ... almost ... a treat.

I eat Miracle Noodles all the time. You absolutely HAVE TO rinse them very, very well before cooking them. No, they are not as yummy as pasta would be, however they work perfectly well as the base for sauces. I watch calories and carbs very carefully and these noodles are filling and take on the flavor of any sauce you use.

I have lost 40 lbs since January and I credit the use of these noodles for helping me achieve that. Again, they are not really tasty unless you put a decent sauce on them. I often use them as a base for fish curry or chicken gumbo (for the gumbo I use Miracle Rice, made from the same stuff as the noodles, just shaped like rice instead)>

actually I go to the whole foods in RIdgewood, nj and they carry it. But when they dont I suck it up and have it shipped its so worth it. Its excellent. However I do order 3 loaves and freeze it. Its the best low carb bread. However,if your not a bread person then no big deal. I am a huge bread junkie and needed to find something that was low carb and not an air bread if you get the drift. This bread has some substance and only 8 carbs per slice. Its pretty darn heavy for the slice so it works for me. I dont eat the house out. Those air low carb breads set me up to binge.

I like the shirataki noodles best in stirfrys or things with very flavored sauces. To me, they seem to match better with Asian dishes. They are kind of rubbery. Also, you don't have to buy the 'rice', you can just dice the noodles. The noodles also improve if you marinate them in the sauce in advance.

The low carb pasta that tastes best to me is Dreamfields. I probably couldn't tell the difference.

Another substitute is made from konyaku, a Japanese pasta. I think it's pretty good but hard to find. The dessert konyaku's are easier to find here.

I tried making noodles from coconut flour. They were good but very heavy.

frank was my idol!!!! Good job cooking with the coconut flour that must have been a real project and one hell of a clean up!!

Steve,

I didn't care for the Zero carb bread either. It has no taste at all. It is way too expensive too. Where can you get this When Pigs Fly bread? Can you order it online? Not all of the bread from Julian's bakery is bad though. The bread that has one carb is not too bad. It is a little dry but it was edible.

I love coconut flour. I can make a carrot cake you would swear was the real thing. I brought one to work once and no one could tell the difference.
