Been on a low carb healthy diet for 8 weeks. The first 5 I lost 20 lbs. Now in the last 3 I haven't lost any? I also exercise on the elliptical 30 minutes a day and walk 2 to 3 miles at least 3 times a week.

You lost a lot in a short period of time, your body is adjusting. Also, you may be eating more. Calories still count. Add some resistance training to build muscles. Squats, lunges, planks, push ups - you do not need a gym to do those. Also up the intensity on the elliptical. Get your heart rate up and challenge yourself.

The weight always comes off really fast at first and then it slows down.

You could also be retaining water because of the time of month. When I'm trying to lose weight, I usually follow a pattern...a fast initial weight loss, then it seems like the scale doesn't move for a month but the day after my period ends I'm 10 pounds lighter than I was the previous month.

Sometimes avoiding the scale helps, or limiting how often you weigh yourself. You can also take measurements of hips, waist, etc. and track inches lost. Sometimes you'll lose inches and your weight will remain the same, but tracking the inches will still give you an idea of your progress.

Low carbs and healthy don't belong in the same sentence. What type of carbs do you eat?

You lost a lot in the beginning because you changed the "normal." Your body was shocked by the workouts and the healthy eating and now your body is getting used to it therefore slowing down your weight loss. You need to keep your body constantly guessing. Change your workouts up, change your food and diet plan. Have you recalculated with your new weight, the calories, carbs, fat, etc... that you need now? You are at a lower weight so you will need to redo these numbers. I have a great support group on FB and we have been talking about this "the dreaded plateau" for a few days... Come over and join. It will really help give you some ideas. https://www.facebook.com/groups/701491493293979/

Low carb diet is a good approach, but I would recommend eliminating all wheat from diet and you'll see that the weight will fall off at a more rapid rate. Don't take my word for it, but personal experience in addition to many people I know.

Not true. Maybe for some, but for the most part its a bogus claim. I also know many people who do not have any issues with wheat and eat it as a part of their diet and are healthy and in shape.

That is your experience, certainly not mine or many others. Consuming modern wheat certainly makes it harder for many to lose weight.
