You actually haven't a clue; the removable media are only used to convey batch results, that are tallied/exported from the internal database results.
An active Microsoft db file (or logfile) CANNOT be 'unplugged/removed' from a running system , or system crashes.
The systems have internal storage, where the system OS also resides ( as well as OS logfiles, that can further divulge nefarious activity!), as well as the voting system software.
What you describe is also only one part of the entire system, which includes voting terminals, scanners, adjudication stations, local servers, and central servers - nefarious activity which could occur on any, or all stages, of which an open forensic audit would reveal.
