We are going to visit our son Tuesday the 23rd. He is stationed at Ramstine, he is taking the month of Aug and we are going to do some road trips. He wants to take us to Munich which should be fun.

Salzburg isn't that far from Munich. The trip takes about 1:30 by train or car. The roads? Well, it's the famous Autobahn. They are good in shape and you are allowed to drive as fast as you want, at least on the German side
Traffic can be annoying during rush hour and parking options are scarce in both cities. I'd probably go by train. The faster ones depart every two hours.
I encourage you to go by car wherever possible. This allows you to stop along the way any time you want. You don't have to stick to the autobahn - in fact, I'd get off it as much as possible.
You are pretty close to Strasbourg, France as well, and the Alsace Lorraine region - I really encourage you to check out that area! You're also close to the Odenwald region and the Main River and there are beautiful, beautiful villages, and castle ruins, and that sort of thing all through there.
Heidelberg isn't far from Ramstein either. Nor is Wurzburg, and Rothenburg, Dinkelsbuhl, etc - in fact, heck, just get in that car and take what is known as the Romantic Road through that region - you won't regret it!
Heidelberg has beautiful castle ruins and is in an idyllic setting, with a lovely bridge over the river. Wurzburg is one of my favorite destinations, especially the very good museum in the Marienburg fortress at the top of the hill (believe me, you can't miss it). Not far east of Wurzburg is a GORGEOUS little castle, still inhabited but open to the public, called Mespelbrunn. Wertheim, near Mespelbrunn on the Main River, also has some fabulous ruins and a charming little village at the foot of the massive castle.
Rothenburg ob der Tauber and Dinkelsbuhl are nearly perfectly maintained medieval towns and both are fun to wander about.
What my husband and I do is drive to Neuschwanstein and then thru the Alpine region to Munich, then Dachau (you do need to see at least one concentration camp while you're there, for some sobering balance), then Berchtesgaden and Hitler's Eagles Nest and on into Salzburg. You can see all of that in just a few days. Between Berchtesgaden and Salzburg are some famous salt mines that are open to the public - they're worth going to see. The tour is excellent and interesting.

I am planning a visit next saturday to Neuschwanstein Castle in Fussen, do you people think that in this season we need a previous ticket booking? in summer it's usually very crowded but we are thinking about not booking... are we right?

I went there aorund New Year's Eve and it was fine. No need for pre booking. The visit to the castle itself is no longer than 30 minutes though.
You'll surely want to explore castle's surroundings. It's gorgeous.
