I've often wondered about this however I do believe the media, mags, are greatly responsible for one particular look, be it male or female being deemed more attractive or sought after. For example I'll never understand the whole " I am not attracted to *insert particular race of male or female*". Like what exactly does that mean, how can an entire race of male or female be unattractive to you when everyone comes in different, shapes, sizes, hues and facial features . I say just go with whoever makes you feel good, putting too many boundaries on trying to obtain what society thinks you should deem attractive rather than following your gut is a complete waste of time.

I'm a woman and we are supposedly brainwashed to like tall, dark, and handsome men with muscular bodies and pretty faces.
Instead height is only important as long as he is taller than me and muscles gross me out unless they are under a layer of meat. My man is sexy with light brown hair, and muscles buried under a layer of meat. He is a real man and my physical ideal.
We all are influenced by the media, we are under a constant barrage of media influences. And if it isn't the media-its peers. I am seeing a lot of people rebelling against that. And of course those that buy into the 'media' images reject them. Take for instance the whole hipster thing. Now, not only are hipsters' made fun of by mainstream, there is actually a version of their "look" that is very mainstream, don't be fooled though, those that keep an eye on what YOU will BUY and what motivates you to BUY don't miss a beat. They latch onto whatever counter-culture thing is going on and market the hell out of it. And that's really what the whole image thing is about.
Whoever has the buying power gets the attention. Now that China is one of the strongest economies in the world you begin to see LOTS of advertising featuring their ideal of beauty and fashion. It isn't that all the sudden Chinese women became beautiful and desirable, its that they have more purchasing power than ever before. Or at least SOME of them do.
Its not that women over 40 are ugly, its that most of them are now focusing on putting their kids through school and engrossed in their families'. So, the marketing of fashion and cosmetics - goes toward those with more expendable income.
I think this might be a generalization to some extent, it is possible too that there is more psychology behind the 'ideals' that come from propaganda. Which is scary-but true.
Now that I'm over 40 I haven't bought into any look, I wear clothes from second hand stores because you can find good clothes that someone else was in a hurry to replace once a "new" look was shuffled in front of them. And I bought it for 5.00 - she bought it for 40.00 and tossed it after the new season!
I haven't changed my hairstyle in a while because my long hair is versatile, when I'm working I can put it up, when I'm not I just brush it and its good to go.
I'd like to say I don't care about media images about what I think men should look like, I tend to completely ignore guys who look like models, they know they look good, and they're used to getting anything they want because of it. They have high ideals, and why not?
I tend to be attracted to guys who look like musicians, artists, or some sort of artistic type. Unfortunately they aren't attracted to me as much because if they're really one of those, they're probably starving and hoping to meet a woman who has money!
So we cant really deny that what we find and define as attractive has something to do with culture and society? Here is a good article about what general things we in our society find attractive, does this ring true for you?
I definitely feel society has changed what men find attractive. With plastic surgery, modeling and porn being multi billion dollar industries, it sets an unrealistic standard. All of the women plastered on magazines and such have been photoshopped and airbrushed. The average woman feels like she can't compete with the world. There are some extremely beautiful, heavier girls but men immediately disregard them because they're "fat", "lazy", "disgusting", or "don't care about themselves." Skinny doesn't equal attractive. It's a sad world we live in.
