Fresh tomatoes are great but if you want to have an extra benefit of Lycopene (antioxidant compound - lower risk of certain types of cancer, especially cancers of the prostate, lung, and stomach and also lower the risk of heart disease; macular degenerative disease, bladder, cervix, skin. It is also said to lower LDL ("bad" cholesterol), enhance the body's defenses, and protect enzymes, DNA, and cellular fats. ) you might consider to eat it cooked, because lycopene in cooked tomato products such as tomato sauce or paste may be more readily absorbed by the body than lycopene in raw tomatoes.
While the lycopene is increased by the heat of cooking, vitamin C content is diminished. You can gain the healthful benefits of both lycopene and vitamin C by eating a variety of tomatoes; some cooked, some raw.

Talking Last year we had a sea of red.

I LOVE Tomatoes.
We planted 12 regular plants & 3 sweet 100 plants.(cocktail).
i eat them all day. I have the sweet 100's in a bowl in the kitchen, when I go in there I grab a handful.

The big tomato season is almost over around these parts. It wasn't a very good year for planting veggies.
Last year we had 100's & 100's of tomatoes, this year, lucky to of had 150 large.

We have had a LOT of sweet 100's They did great as usual.

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
If there is a tomato with a bad spot, I cut it out, then taste the tomato to make sure it taste good, then toss it in a ziploc & freeze them.
Down the road when I'm making Pasta sauce or chili even stew & soups...I've got the tomatoes to toss in.
When I run out of the freezer Tomatoes then I use can. Usually stewed can, cause you can buy them with green peppers & onions in the can. They have a better taste.
When tomatoes went sky-high and were picked green, I stopped buying them. But now Romas are reasonable, and I eat one every day, and look forward to standing by the sink and slurping it down. They're quite good, if you don't mind a bit of mealiness in the texture. I keep a couple out of the fridge, to ripen a bit more and I like them at room temp.
But I never cook with fresh tomatoes. Tomato paste is so cheap, and is pure, and unsalted, so is perfect for every use unless you want to see visible bits of tomato in your dish.
I wanna see some pictures of that sight ...
I love a BLAT. What starts with an "S" that we can add so we have a BLAST sandwich?
Sweet onion maybe but that seems kind of like cheating...
Forget the ziploc, and just put the whole tomato in the freezer. They take up less space when separate, you can just keep pushing them around into nooks and crannies.
Rainroosty, I stand by the sink and eat mine, because they are so juicy, they squirt when I take the first bite.
