Why double? I make enough food for about 10 meals. Rice, for example. I make enough for a week. Because of the fixed time for cleanup, chopping a weeks worth of vegetables at once can save later cleaning. Same with marinating/boning/slicing meats. If you think about it, cooking is usually only a small part of meal prep time. How easy it is when everything is ready to go! Chopping, cleaning, etc takes much more time.

I always try to make enough at dinner to have some for lunch the next day. I usually reserve the lunch portion so it never even makes it to the table. Used to help with teenagers at the table (who ate 2-3 steaks while ignoring all the other food and left us only broccoli for lunch the next day).

I also abhor the outdoor chores. I would much prefer cooking all the meals than worry about mowing, weeding, or picking up dog poop. If it's outside, I don't touch it. Not a large price to pay doing all the cooking. Plus, I'm a better cook :-)
