You know, I don't think I ever had it in Europe before I began seeing it in recipes in the 80s. There really is nothing quite like it, though.

We had this the other night when the weather got chilly:
Spinach Cabrini Casserole
It's kinda rich, I think you could lower the amount of sour cream, or substitute with Greek or regular plain yogurt.

The pork green chile I made was pretty tasty -- but super HOT! I got the recipe in the New Mexico forum, and tweaked it a bit. I add cumin and used a whole bag (30 oz.) of HOT frozen Hatch green chiles. Cooking it in the crock pot all day allowed it to break down some...and the guys at my school loved it for its heat. I served it with sour cream and tortillas and it was good. Next time I will probably use milder chiles or maybe use chicken stock instead of water.....

Tonight we are having chicken stir fry. Really ate a lot of junk this weekend (take out pizza, stuffed seafood shells and about a pound of butter in the white clam sauce, breakfast burritos, etc.) and drank too much wine. Time to get back on track this week.

I'm thinking of maybe a casserole. Elbow noodles, cream of chicken soup, chicken...salt pepper....easy

I've never made it before, so we'll see LOL.

For Martin Luther King Jr's birthday dinner, I am making southern fried chicken which is marinating in some buttermilk and Franks Red Hot Sauce as you read--later it will be dredged in self rising flour and pepper and fried in hot oil.

To go with that I am going to make the corn bread casserole using sour cream, cream style and kernal sweet corn, eggs and Jiffy mix.

For the vegetable I am cooking up some Mustard Greens with some bacon fat and a little onion and having vinegar to pass at the table.

We always have rice, so will have some hot Carolina Rice. (oh I forgot I have some nice yams to bake too) Hmmmmm is that too much

We aren't big into desserts, but a 4 or 5 layered German Chocolate Cake would go nicely with it.

Can I come over for dinner????? Sounds divine, will bring my bottle of 25 yr old balsamic vinegar for the greens!

Ok...that sounds really really good....but I don't know know what chicken fried steak is...and I don't know what white gravy is like LOL
