I'm more of a veggie than a fruit-eater but have been making myself eat fruits and berries every day....mostly I eat vegetarian.
Besides my morning fruit shake I had an Amys Organics vegetable-rice bowl for lunch. (I know that is cheating, sort of.)
Dinner was a frittata with basil, baby eggplant and tomatoes from my garden.
Heck yea I did! Ate 2 cacti leaves (nopales), steamed carrots and broccoli, along with a chaote. I also had some onions in my meal, which also was made with corn. Is tomato as fruit or a veggie?

More veg than fruit myself. Today I had a salad with cucumbers, lettuce, and tomatoes for lunch.
Dinner? I had some sauerkraut. Less veggies than usual.

It's botanically a fruit, but but because it's savory, it's thought of as a vegetable by most people.
I have no trouble preparing and eating veggies this time of year. We go to the farmers market every saturday and I have to hold back on buying too many veggies. Today for lunch mixed salad with 3 different kinds of lettuce, tomatoes,cucumbers and carrots. supper was a chicken dish with onion, carrots, broccoli and celery. I still have corn, squash, mushrooms, carrots and green beans to eat up before next Saturdays trip.
I would eat lots of fruits and vegetables every day, but my system can't handle them. Many decades of IBS, fibromyalgia, "dumping syndrome" and other problems make it difficult to enjoy them. I have a large trayful of many kinds of vegetables in the refrigerator but have to carefully eat only small amounts. Last time shopping, I bought a box of veggieburgers and have been enjoying them though the tummy did fuss some.
How I wish that I could have a big salad like I love to make: lettuce, chopped up or cherry tomatoes, green peppers, cucumber, shredded carrot, shredded purple cabbage, etc. I love that! Sadly, my body doesn't appreciate it, and I can get very ill. *sigh*
