For health reasons, I'm told to shift my diet from flour to corn as I can. Corn bread I like but haven't made that for a while and just made my pure corn bread pan cakes. They were okay though yesterday's 1/2 with flour were better. Mind you, I do pan cakes, have "forever", without syrup.

Not so sure on corn tortillas; that state of affairs may swear me off tortillas forever.

What other ways are there to do corn meal?

Are there other, non-wheat flours you can use? There are all kinds of wheat-free flour mixes available now for people avoiding gluten.

Of course, polenta is a great use for cornmeal, and maybe make an eggy batter for cornmeal crepes for wraps

And those other flours are EXPENSIVE AS HELL! Something like $20 for less than a lb of Keto.....and gluten is not the concern.

yeah really, I see them for much less. I used to buy almond meal & it cost less than that. Gluten may not be the issue, but it may work for what you need.

Corn flour is more finely ground and works well for things like arepas, empanadas, etc. Corn meal is delicious but you should look into how corn flour might open some doors for you.
