I saw the Perdue ingredient list. Still no dark meat. But I think jlawrence01 is right: it gets sold to schools in the form of nuggets and patties. In the past, I remember seeing news articles about dark meat getting exported to Russia, but I'm sure that changed now, with Putin and his embargoes.

I didn't post that in response to the dark meat question. I was responding to the "what's really in your chicken nuggets" discussion.
The company Hip Chicks , which was recently featured on West Texas Investors' Club, sells organic frozen nuggets from chickens raised on Sebastopol CA. They're supposed to be excellent and are featured in more stores all the time. Check your local natural foods store. http://www.hipchickfarms.com/

That's not how it's "whitened." The preferable method is to separate the dark meat into water, fat, and meat. The dark meat is "whitened" from the removal of fat and myoglobin.

Neither sounds appetizing. What's wrong with just using leg/thigh meat for making chicken nuggets? They'll be coated in batter or breading, and with sauce on the outside of that, so it's not like people will even notice the darker meat color.

have heard and read similar articles in the past plus just really taking time to taste them is enough for me not to bother with them. In fact when I see boneless chicken wings on a menu I tell myself: "myself, you do not want them" and I usually listen. I do have to admit, maybe once a year it is fun to have a cheat day or night; nuggets, cheap fish and chips with a decent salad. See, I did add a healthy salad to my cheat meal.
