Okay, Thanksgiving is officially over and the Christmas season is upon us. I need help. My wife and I go through this every year, and every year it's not decided 'til the last grocery trip on the 23rd...what is for Christmas dinner? First I will say we always have French Dip for Christmas Eve ( a longstanding tradition from my childhood). We've just had turkey for Thanksgiving so no one is much for turkey. I'm not an advocate for ham, my wife loves it, I can do without it. So my question...what's left? I know there is so much out there but I can never think past the three options of beef, ham or turkey. If I could get away with doing sushi I would...but then I'd be spending Christmas day downstairs away from everyone else. Not a good idea! Or is it?? Anyway...please help! (and the thread title is Christmas goose is a running joke in my extended family...LONG story, disappointing ending unless you were there).
Well I had to vote for the coon so I could see 100% for coon , (which I would love to eat) but my mother is VERY traditional. She thinks we must have chicken and dressing. So I have started to cook it since she's not able to any more. But if it were up to me, we'd have something else.
Back when my family all got together, we often had both beef and turkey (my family doesn't eat pork for religious reasons). Some years we would have a beef roast with the gravey, one year my Father made a New England boiled dinner with the corned beef roast, cabbage and potatoes but my favorite was the black angus prime rib roast we had, that was awesome.
We always had the turkey as well though. One year I made barbequed beef ribs that were pretty good as well.
I like goose smoked. Add some cranberry relish, some mustard pickles, wild rice pilaf (with toasted pecan pieces and plumped raisins), sauteed green beans, and fresh whole wheat rolls with butter, what more do you need?

Is goose greasy? I know duck is, but not sure about goose.

Goose isn't greasy but yes it is a much fattier bird than turkey or chicken and even duck. I find it a bit rich for my taste but it's nice with a really, really crispy skin and goes really well with spiced roasted parsnips and glazed carrots.
I actually think that nothing can be a truly gorgeous organic, free range chicken or turkey for Christmas,though maybe a loin of Pork or a fillet of beef ( a huge family size one) as they do in some parts of France and Italy.
We don't really celebrate Christmas at my house, but since everything is closed (we can't even be good Jews and eat Chinese!), we generally do some kind of dinner. This year is going to be particularly difficult.
I was just diagnosed with celiac disease so I can't eat anything with gluten. My father won't eat anything without. :P I also only eat fish for environmental and health reasons- my dad wants ham for Christmas. In the past I've conceeded and made roast beef for the whole family. But no. This year my dad has already proclaimed that it will be a ham year. :P
We usually have some sort of Roast Beast--beef tenderloin or some such thing, but sometimes we do another turkey.
I've had goose and it really is rich, but not as fatty as duck.
We had Goose a coupla years, but lately it's been something else. Too much fat is tough on the system.
