I ask this because I was watching Patis Mexican table and she made red pozole. I have never had it or made it but I would like to. Would you classify pozole as a stew?

Stew ..yes! I've made pozole as do my kids. It would be reddish for sure. Not familiar with white..

Red like with red chile? Or do you mean with green chile? I've never heard posole referred to as red or white. I do red or green chile, but being from El Paso it's usually pork/green chile, New Mexico style.

Unless you are talking about posole as in hominy--not the stew. But that only comes in white & yellow.

Actually, my first attempt was likely red looking. My boys do the traditional type more peppers and greenish with pork.

I like both "Red" and "Green" varieties of pozole. Sorry this pocho has never heard of "White" pozole

Red-Colorado
Green-Verde
White-Guero

Unless white is before you add the chile sauce. And everyone knows everything taste a little better with a little chile sauce. Well according to my wife.

I just saw that episode, it looked really good! I make a posole that isn't even remotely correct traditionally, and it's more of a white because I don't add the red chile concoction that she added. But I think I'll give her traditional version a try since I love ancho chiles.

I like posole, but it is too much trouble to find the posole, so I just use corn nuts. It turns out fine. Just be careful about adding salt, since the corn nuts are overly salted.

I would assume that "red" posole means with beef and red chilies.

I've never heard of "white" posole, but assume that would be made with chicken and green chilis.

"Green" would be (probably) pork and green chilis, although you can make green chili with beef.

Personally, I use pork and red chili
