Going with the fish theme:

Starter: Mackerel Pate

Main Dish: Grilled salmon with wild rice and cooked zucchini

Dessert: Chocolate mousse cake

Fresh, crisp, COLD salad. With grape tomatoes, some crumbled bleu, shredded carrots, fresh peas, and a good, creamy dressing.

Grilled lime shrimp on a skewer. A lot of them. With steamed broccoli, with lime juice and chili flake. And 1 piece of garlic toast.

Then, a bowl of perfect berries with a drizzle of good melted chocolate over them..

Sparkling water to drink, please!

An assorted beet salad with goat cheese and walnuts

A big thick tomahawk ribeye steak served medium rare

Followed by a grand marnier chocolate souffle

Grilled calamari...scored in 1/8-1/4 cross hatch...drizzled with lightly seasoned olive oil to finish. Serve it with garlic crostini to soak up that lovely oil. Small glass of Riesling (Dr. Loosen) or Pino Noir (Beringer Napa Valley).

1.5"-2" thick ribeye seasoned with salt, pepper, & granulated garlic and grilled over hardwood coals. No further than med-rare. Grilled asparagus, just slightly charred on the tips and seasoned like the steak with the addition of olive oil. Starch could be roasted potatoes or a simple mushroom risotto (morels would be nice). A glass of Mt. Veeder Cab.

Creme Brulee with a glass of Port or Australian Muscat (from Rutherglenn).

I'm a happy man.
