In honor of a most stupendous event happening last night*, I am making my husband his favorite - chicken thighs, wrapped in prosciutto, baked, then covered with a mushroom, onion, and sour cream sauce, served on rice.
*We lost our beloved German Shepherd dog after 13 years last January - and last night, we adopted another dog! Our house feels complete again!

It's too hot to cook, so I stopped by my local Hawaiian fast food place and picked up a chicken katsu plate which had sides of macaroni salad and steamed rice. Iced tea to drink.
