Ginger poached king salmon with a buttery shallot/ginger white wine reduction sauce over steamed spinach and rice.

Since we haven't had fish all week, which is real unusual, I am taking some Rainbow trout out of the freezer. I think we will have green beans and rice with it.

How do you cook it? I have at least 15 in the freezer but don't know how to prepare them.
