My husband and I both worked this weekend and neither one of us feels like cooking much of anything:
He is going to grill hotdogs, brats and polish sausages (I'll put out the toppings: chopped onions, chili, relish, sauerkraut, hot mustard and the rolls), potato salad, cucumber salad and peach pie with whipped cream for dessert. I'll probably make a big pitcher of lemonade too.
Left over meatloaf, mashed taters and fresh cut green beans!
I have never, in 31 years of marriage, had enough leftover meatloaf to actually have "leftovers". I make 2 (2 lb) meatloaves at a time. For just two of us. We have one for dinner on night one. Husband has meatloaf sandwiches for breakfast and lunch the next day and that baby is gone!
A lemon blended nonfat Greek yogurt, a whole wheat pita bread with healthy-style margarine, 4 Belvita blueberry breakfast biscuits and a mug of black tea with a teaspoon of sugar.
