If I store semi-hard (Swiss type) cheese in an air-tight container and store in refrigerator, is ok, or not recommended, to remove the shrink wrap that it was in when bought? (the shrink wrap is badly torn anyway)

Plastic wrap or even foil is better...less air...but even a lidded contrainer or ziplock baggie is better than nothing.

It will mold if there's air and moisture. Wrap well in plastic...I use a food sealer!

Cold is good. There's no reason to put it in a warmer part of the refrigerator.

Air and moisture are a great place for mold to start. The less there is the longer your cheese will last.

I wrap my cheese in paper and store it in the deli drawer. No mold, but cheese doesn't last long around here. I avoid plastic in the kitchen, especially plastic wrap.

The bottom drawer suggestion is because most cheese tastes/textures best at room temp. My European ex was scandalized at the thought of putting any cheese in the fridge
