Bubble and squeak is a good way to use up leftovers. We use leftover mashed potatoes smooshed together with leftover vegetables and chopped leftover meat, we usually use leftover ham. Then we make a kind of potato pancake and fry it up. I am sure there are other better ways of making it but I find this version is a great comfort food for our family.

Leeks are amazing.

I generally don't include carrots in with my corned beef, potatoes, and cabbage pot, but some people do (and, with the potatoes and cabbage, it makes he colors of the Irish flag). To me, the carrots impart too much of a sweetness. to my corned beef, cabbage, and potatoes.

I almost never get to make bubble and squeak, unless I purposely overcook, because leftovers are hard to come by.

I'm out of synch. Just made a big pan of lasagna. So the only Irish thing here tomorrow will be a Belleek Irish coffee cup and saucer with some silk pansies in it.

Irish Stew with root vegetables - potatoes, carrots and turnips and leaks in a rich wild mushroom and onion gravy spiked with Guinness.

Colcannon. Irish Soda Bread with Kerry Gold butter.

Irish Coffee with Jaimison whiskey.

My problem with traditionally made Irish stew is the use of mutton or lamb, neither of which I particularly enjoy, flavor-wise.
