We make our colcannon like mashed but we throw into the potato pot cabbage and leeks. Then mash it all together with cream (or milk) and butter. I absolutely love potatoes this way.
Bubble and squeak is a good way to use up leftovers. We use leftover mashed potatoes smooshed together with leftover vegetables and chopped leftover meat, we usually use leftover ham. Then we make a kind of potato pancake and fry it up. I am sure there are other better ways of making it but I find this version is a great comfort food for our family.
I generally don't include carrots in with my corned beef, potatoes, and cabbage pot, but some people do (and, with the potatoes and cabbage, it makes he colors of the Irish flag). To me, the carrots impart too much of a sweetness. to my corned beef, cabbage, and potatoes.
