For a long time I didn't get allspice because I could swear the one time I did get it, the ingredients said it was a mix of cinnamon, ginger, and nutmeg. Since I already had those spices, I never saw the need to get a combined spice.

But recently, I saw a recipe calling for cinnamon, nutmeg, and allspice. So when I went to the store last night, I casually looked at the spices and noticed ground allspice and whole allspice, and lo and behold, the whole allspice was little nuts, or something similar. Which leads me to believe that ground allspice is not a combo of cinnamon, nutmeg, and ginger. Am I right? I did get the small jar of ground allspice and nowhere on it is a list of "ingredients". So if it wasn't allspice, what was I looking at that contained a combo of the three other spices?

As to the ice cubes. Yeah, I know it's not cooking or food, but it's in the kitchen and so I just have to know what am I doing wrong with my ice cubes. OK, I want you to know I can hear you laughing out there!

I've had ice cube trays before and have had no problem with them. Then about 3 years ago, I got some ice cube trays from the dollar store. The plastic ones you twist to get the cubes out of, like I've always had. They worked well for about a week. Then all of a sudden my ice cubes were shattering or splitting in half when I twisted the tray. I thought I overfilled them, so I underfilled the tray. I tried different temps of water. No matter what I did, the ice cubes refused to pop out all nice and square, and they continued shattering and splitting in two until the trays themselves cracked and I tossed them out and got new trays (and yes, I am gently twisting the trays, not wringing them to death).

I got the new trays from a grocery store and they're also plastic and work the same way, you twist them to pop the cubes out. The trays worked well for about a week, then all of a sudden, my ice cubes are shattering and splitting in half again.

Is it the plastic trays? Is it the fridge? Is it - dare I ask - me?

Yes, I can still hear you laughing. Yes, I am embarrassed. I can make mashed potatoes without lumps and a beautiful cheese sauce from a roux, but I can't get the ^&$%#% ice cubes out of the tray without shattering half of them. We won't even talk about the one ice cube that always sticks and then pops out and lands on the floor.

You can always get one of those ancient aluminum ice trays that shattered the ice and made your fingertips freeze to the tray.

Why Do Ice Cubes Shatter Instead of Releasing Cleanly? - General Topics - Food News

I have silicone trays (they're more novelty than anything) and sometimes they're a pain in the donkey when trying to get the ice out.

For plastic trays, I usually turn them over, give them a quick run under warm water then turn the tray back upright and give a twist.

If you're stacking the trays and it's the bottom or middle trays that are splintering the ice then that's physics:

As for the ice cube thing - I love my OXO trays, they have sliding lids, the cubes are smaller than other trays but you can stack them all up!!
