Tonight we are having:

Chicken Kiev (stuffed with mozzarella, cubes of butter and a garlic/onion mixture)
Parmesan garlic noodles
tomato, cucumber and avocado salad
Apple spice cake with cinnamon cream frosting

A bit warm here for our dinner but I'll let it chill a bit before i eat. A beef soup in the crock with many veggies, beef stock and some Pastene tomatoes.

Just returned from Vermont, with my son, who will be a senior in college next Fall. For now, he is spending most of the summer with us. So I am one happy mom.

Making his favorite - Enchilada bake, guacamole (home made of course) salsa, tortilla chips, and fresh grilled mixed vegetables - peppers, zucchini, and sweet potatoes.

Mom's corn bread. And my son's desert choice - Strawberry Short Cake!

So happy to have him home! And we are very proud - he already has a Summer job laying tile!

I found a Bon Appetit recipe that sounds good - Roasted Chicken Thighs with Lemon and Oregano - gonna try it tonight along with a salad and if daughter wants Potatoes Anna.

Weird. Still not hungry and still sore tummy inside. Making a little pork scallopini and rice, though.
