Maybe going out - early. Too hot to cook (high 80s in Laguna Beach is a heat wave).

Besides, I'm out of ideas just now. Did quite a bit of fancy cooking over the weekend...

I'm thinkin' sushi!

Yellow or green zucchini about 3 large ones or 5 small ones ( chop in a food processor or grate them using a cheese grater)
2 eggs beaten
1 Tbsp. each onion and garlic powder
1 tsp. salt
1/3 cup seasoned bread crumbs
1/3 cup flour

Squeeze all of the water out of the zucchini first then mix in other ingredients. Never tried it but you could add a little curry spice to these or nutmeg. Mix well and form into patties and shallow fry until brown and crisp on both sides. Drain on paper and sprinkle with salt.

Just add some parmesan cheese and substitute diced onion for the onion powder. You'll have another variation with a different flavor profile.
