I am making Crock-Pot mac and cheese and roasted beets. I am also attempting fried chicken. While shopping last week they had cut up chickens dirt cheap. I picked up a little over four pounds for around two dollars. I have been intrigued by making good fried chicken at home so I figured this is my chance.
I researched recipes and have decided to combine a few. I started the process on Saturday with a brine. On Sunday I rinsed and dried the chicken. I put them in the fridge with no cover.
Today I will dredge and coat, wait two hours and repeat. I will have my husband do the actual frying, he is much better at it.

So fingers crossed it works out. If not, oh well, I had fun experimenting!

Fur baby comes home from the breeder today!!! I'm sorry for the puppy overload, but I've been so sad since Max passed away in April. I think tonite will be something quick and easy. Probably pizza delivery.

Thank you all! I expect I'll be updating on the state of hospital food as well as updating on how I'm doing. If I say anything weird, blame it on the pain meds.

I think DH is planning burgers for dinner tonight. Time will tell.

We have leftover stew and leftover mashed potatoes, so, my version of Sheperd's Pie tonight.
