Hubby had leftover ribs, I made some beef stir fry with a couple of strip steaks from the market down the street. They were labeled NY strip, but I doubt that. At any rate, they were pretty tender and tasy!

Just a salad and a handful of mixed nuts tonight. Oh, and I had a handful of formerly frozen strawberries for dessert. Reached into the freezer for them, and they were squishy. Guess we're replacing the fridge, pronto.

To sort of quote a character from Forrest Gump, and sort of recap our (almost week) of meals:

Anyway, like I was sayin', chicken is the fruit of the field. You can barbecue it, boil it, broil it, bake it, saute it. Dey's uh, chicken-kabobs, chicken alfredo, chicken fricassee. Pan fried, deep fried, stir-fried. There's pineapple chicken, lemon chicken, coconut chicken, pepper chicken, chicken soup, chicken stew, chicken salad, chicken and potatoes, and chicken sandwich. That- that's about it.

Tonight? You got it! It will be baked chicken breast with couscous and Italian green beans.

Someone passed me this Chicken Divan Casserole from Scratch recipe along so I thought I try it out and use my family as guinea pigs With it steamed rice and lassi to drink. For dessert a pink grapefruit or an orange.

Boneless butterflied pork chops w/Kerrygold onion & garlic butter, mashed potatoes, green beans & dinner rolls. It is my day off so I may get adventurous and make a pan gravy for the potatoes. �� Dessert is whatever cookies he chooses from the jar.

Today is brats BD. He is one year from the big 80. I am fixing his favorite: spaget, homemade meat balls and sausage, green salad and garlic toast. Of course he will have a scotch or a glass of his favorite wine.

Tonight is crazy! My nine year(he's autistic) was approached about joining the Special Olympics ski team for the mountain we go to all the time. Tonight is his first practice and we have to be at the mountain by 5:30. So super early dinner(like 4pm early) for the kids of homemade pepperoni pizza. We pass both a Burger King and 5 Guys on our way home. I will stop at one of those for my dinner. Have I mentioned I am the world's proudest momma?
