Brown and wild rice bake with eggplant, mushrooms and kale in a creamy herb and Swiss cheese sauce.

Field greens with grape tomatoes and red onions with a home made honey mustard dressing.

Some kind of wine. Not sure yet.

Well, it was going to be pasta primavera, but we ended up having fettuccine with roasted asparagus & smoked salmon in a lemon-dill cream sauce. I found the recipe on-line, and it's definitely going into the rotation as long as I can find good asparagus. It was outstanding!

Honey BBQ pork from the Asian market, brown rice and broccoli salad. Iced tea to drink.

Petite filet-medium rare, baked potato with butter and a salad from Texas Roadhouse. I spent the entire day with my 19yo daughter who is away a college. We shopped, saw a movie and had a great time catching up! I miss her terribly.
