New years eve and tonight is a quiet evening at home with my DH. Both getting over being sick. It's munchies for dinner. Shrimp with cocktail sauce, spinach dip, chips and crackers and maybe I'll throw in some of those boneless honey BBQ wings.

We'll be having crab cakes and something Korean that DS wants to make, before heading out to a show.

I have a gallon and a half of Midwestern-style elk burger chili simmering on the stove.


Which is really no chili at all but rather a thick stew of tomatoes, onions, bell peppers, celery, chili beans and meat blended with hot chili powder. I type with some embarrassment but that's how it is out here on the prairie. We all grew up calling a can of tomato soup, a pound of hamburger, some celery and a can of kidney beans "chili." Most of us skipped the chili powder altogether.


Later I'll make some corn muffins. DH will eat his the Midwestern way - with soda crackers. (It feels like a public confession.)


For dessert we'll have banana nut cake with cream cheese butter frosting.

Roasted chicken, mashed potatoes and gravy, stuffing with celery, carrots, onions, and broccoli. I make a bed of celery, carrots, and onions in my cast iron skillet. Stuff half of a raw onion and half of a lemon in the cavity and roast on top of the vegetables. When done roasting, while the chicken is resting, I discard the vegetables and make my gravy with vegetable and chicken drippings. Comes out awesome!

First off, I should tell you that I am definitely a minimalist in the kitchen and do not collect small appliances, so when I received an Instant Pot from my in-laws for Christmas, I was wary. However, after a week of using it, I am seriously in love with this thing. IN. LOVE.

Tonight, it will be enchiladas using the pound of unsoaked black beans I just pressure cooked in 35 MINUTES from dry beans straight out of the package! IN LOVE I TELL YOU! I know, I know, I'm late to the party. Other people were on to this thing two or more years ago and tried to tell me. I ignored them to my now regret, but I'm a convert. It's the best thing that's happened to my cooking since, well, ever.
