A custom mac n cheese dish from my (about to be) newly college attending youngest daughter. She bought my dinner tonight. I am taking her for our final mother/daughter breakfast for a while tomorrow morning.
Hadn't had fish in a while, so tonight was the night! Usually when I have salmon it's "regular" fillets bought from the meat/fish counter, but awhile ago I'd bought a frozen kind, Sea Cuisine Applewood Smoked Salmon, to have for "emergencies." (OK, my "emergency" today was that I was lazy! ) I was able to time everything correctly tonight so the veggies didn't overcook ...
The salmon was actually quite good -- it has a maple-flavored glaze and came with a separate packet of a mustardy sauce (I used only about half the packet, but it was really tasty too). The veggies were great tonight -- used a bit of the mustard sauce on them too (yum!).
I always forget how much I like fish ... 'til I remember to have it again for dinner! I also would never have thought that a maple-syrupy-type glaze would go well with salmon, but it definitely DOES! I am going to look for a similar recipe online for next time!
I wasn't really that hungry tonight (and I'm exhausted), so I let my husband fend for himself and slurped down a dozen raw oysters and a glass of champagne before going home. He ended up eating a massive cheese burger and onions rings all by his little lonesome and pouting over a couple of beers (what a baby!)
tonight I am going to attempt to make the chili rellenos I have been talking about, plus I have some wonderful home tamales, (no I didn't make them) I took out of the freezer. I will heat them up and make a white cheese sauce I think, as well as guacamole salad.
