My 67 year old wife and her 64 year old sister cannot stand mustard. Lifelong distaste. They also can't stand cucumbers. So it's not necessarily an acquired taste. You either like it or you don't.
Personally, I think a hot dog needs mustard. They will put catsup on a hot dog (which is ok if that's what they like) or a burger. I only use catsup for fries myself.
For me, horseradish was the acquired taste, but I must have it with my prime!
I've read that tastes over the generations have shifted from tolerance to bitter foods more and more toward sweeter. And that foods like corn and tomatoes have hybrids that are much less bitter than the "heirlooms".

definitely an individual thing, although I will concede that younger kids are less likely to want it on a sandwich or hot dog. But most of them are ok eating it when used in various dishes - included deviled eggs. My own kid won't eat them, but he doesn't like eggs in general. When I take a giant batch of deviled eggs to a pot luck, they get devoured by all ages.
I've ALWAYS liked mustard, and vinegar-based foods, even as a kid. Someone told me my pH was off when I was little, I was eating so many marinated artichoke hearts at a buffet.
It's MAYO I didn't start liking until my late 30s/early 40s.

My snack as a kid was yellow mustard on a slice of bread. My brother preferred ketchup. Guess who had more teeth problems? I never was much for sweets.
