I've seen various takes on grilled cheese sandwiches, everything from adding bacon to them to pork bbq to Mac and cheese, etc.

I'm going to try making something like that and was wondering what kind of bread to use. I usually use Wonder Bread to make regular grilled cheese but I think I need something more substantial than that for these sandwiches.

I don't know if it's too complicated to call a grilled cheese but I make a sandwich with Muenster cheese, Mesquite smoked turkey, Piquillo Peppers (like a thin fleshed red bell pepper), olive tapenade, on sourdough bread spread with Dijon mustard and grilled, very tasty.

Sourdough is my favorite for grilled cheese, too. I don't know if you have Trader Joe's near you but their sourdough sandwich bread is ideal for this.

This thread should be served with napkins to sop up the drooling.

A simple grilled cheese is wonderful, some of the variations are amazing.

I won't suggest a "best" bread, but I will say that smashing the sandwich can be crucial to it being great.

I think I will be looking at the sourdough options at my local bakery. I haven't had that in years and it really is very good. Seeded rye also sounds really good. Maybe I'll try both.
