Recently, while driving around looking at the aspen leaves changing to gold, we had lunch in a little mountain town. The restaurant advertised home cooking and I settled on a chicken salad sandwich on a croissant which was described as "just like your mama used to make." To my surprise the chicken salad contained whole-kernel corn. What?? Did your mama used to make it like that?
My mama never made chicken salad and she never bought croissants. However, corn in chicken salad sounds like it would be fine. Maybe some diced celery, too, and some green onion.
No, but we had all sorts of other things in chicken salad. Celery, onions (red, white, or green), water chestnuts, grapes, black olives, green olives, pickles.... Not all at the same time!
But I do, and I would never think to put corn in it. It just doesn't "belong" in my head's way of thinking. Celery, onion - yes. Green peppers would be pushing the envelope. But corn? Nope.
(Then again, we all know that my head's way of thinking is pretty strange, so don't pay too much heed to it. )
No, never had corn in it (though I doubt I'd mind it).
My mom's chicken salad involved onion and celery.
I make it with onion and celery. Sometimes I will add nuts for crunch if I have them on hand, and don't mind apple or grape add-ins if somebody else makes it, but seldom add them myself. I do sometimes add curry powder to the mayo.
