A couple of year ago or more there was an episode on "Food TV" and I've forgot. You may can find it on their website if it wasn't one of those limited available recipes. It did sound good. I too would like more info on them. I'm always looking for new veggie ideas.
I take the chayote squash, slice it lengthwise, and grill like you would zucchini or eggplant. Also, it is delicious sliced lengthwise, breaded by dipping in flour, then egg, then breadcrumbs and frying in oil as you would with wienerschnitzel. I season the cut sides before breading. Don't worry about the little seed in the middle of the bottom end - it is soft after you cook it, but you can always just pick it out of the one slice it usually ends up in after it is cooked (a lot easier than trying to whittle it out when the chayote is raw).
