So....I love catfish...especially fried catfish.
I know catfish would be better for me if it wasn't fried.

Does anyone have a particular method they can recommend I can try for catfish that will make the catfish have the same consistency as when it's fried?
Is baking it a viable option?

You can cook catfish any way you want.

You can also boil steak or cook pork chops in the microwave.

I would imagine baking would be your best bet to get a similar-to-fried consistency. I don't think the interior of the fish is really going to change much, but you're not going to get the exterior fatty crunch. That's pretty much what you're giving up. You can also pan-fry in very little oil without coating. Make sure the fish is dry before you put it in the pan and the pan hot or you run the risk or having too much liquid and it start to cook with a wet heat instead of dry.

The only way you're going to get the same flavor and texture is to fry it. The best you can do is use a minimum of oil rather than deep frying.

Catfish was meant to be fried and thats the way I eat it. Seems wrong to try it any other way. They have other types of fish for baking, broiling etc.

Here's a recipe that I use when I don't fry or bake catfish. I tore it out of the July 2005 Southern Living. I wish you could see the picture of the completed product--just gorgeous.

I agree with pan fry with just a little oil. I like to dip mine in buttermilk that has a little tabasco in it - then coat with a corn meal mix that is seasoned cayenne and herbs - with a nice remoulade sauce - served with spicy sweet pepper fries!

Okay it's not low in fat - but it sure is yummy!

The Catfish steaks are delicious!! Baking it with the cornmeal if you like it fried but don't want all the calories and fats.
