I used this recipe from Quaker Oats and just substituted chicken for turkey and also cheddar for mozzarella and broccoli for the spinach. I have made the original with the turkey,spinach and mozzarella which is also good. This time I wanted a change.
In preparing the meatloaf I just follow the ingredients for Quaker Oats website- original meat loaf-added ketchup and Worcestershire sauce, then added the in between filling.

You can tweak it anyway you like. I really liked the ground chicken over the turkey.

Oven roasted pork loin marinated in Yoshida's marinade then rolled in sesame seeds
Oven baked pierogies with sour cream and onions (I know a weird combination, but whatever)

LOL at myself I had visions of a chicken breast stuffed with meatloaf! LOL I have never seen or had ground chicken so that doesn't pop into my mind as an option I'm sorry. I will give this recipe a try with ground turkey though thanks for posting it!

You're so right-I never saw ground chicken before either. After moving out to Midwest and going to a local supermarket they had ground chicken-if I'm not mistaken I think it's Purdue or another national brand-it's was not a local brand.

But I am from the Midwest here in IN! I use a local butcher shop so maybe it just isn't a great calling for it here or else he would have it in his meat case. I'll ask him next time I go get meat.
